Chocolate éclairs

Chocolate éclairs are certainly among my top five favorite pastries—and considering the competition, that’s saying something. They look superficially similar to longjohns—they’re oblong pastries with chocolate icing and a cream filling—but éclairs are made of choux pastry, not donut dough. (Not that there’s anything wrong with that.) Today’s National Chocolate Éclair Day, so visit your favorite French bakery today and pick up a couple (one for me, obviously).
